Game Day Fuel

Sunday morning breakfast...game day fuel. Herbed French omelettes filled with lightly sautéed veggies, and cheese. Protein, dairy and veggies all in one!


The egg was seasoned with salt, pepper, chives and parsley. The filling consisted of finely diced red and orange peppers, red onion, mushrooms, and garlic- lightly sautéed with EVOO (that's extra virgin olive oil) and a small amount of herbed garlic butter from Sam’s Club (love Chef Shamy) for some added flavor.

Ok, i'll admit...the kids had regular scrambled eggs- they didn’t want the veggies, but I tried. My husband and I enjoyed the omelettes thoroughly! Herby and delicious 😋






The addition of chives and herbs to the eggs mixture really brings out the flavor in this omelette! The debate about eggs goes back and forth, but really, one to two eggs are good for you. These were cage-free, organic brown eggs, so they were packed with omega-3 fatty acids. Good for your brain and heart.
